Purple Mashed Potatoes

Like most cooks who do holidays in America, I’m no stranger to mashed potatoes, usually I buy rather starchy potatoes and end up with something I’m not quite satisfied with the flavor of. However, the Aldi’s here has a mix of small potatoes in white, red, and purple, and recently got a bag without anything particular in mind.

As we were having pork chops one night, I thought it would be nice to make a small batch of mashed potatoes with them, as they were there and of course we have the time. The first season of Julia Child’s show “The French Chef” was available on Amazon Prime in March, and it recommends steaming potatoes, so I tried that. These small potatoes took 20-30 minutes, and it worked beautifully. They’re also a beautiful color!

The flavor of these was much better, something about the mix and ratios of ingredients worked out perfectly, and I’ve now made these twice.

Ingredients

  • 1 bag of small mixed white, red, and purple potatoes
  • 4 Tbsp butter
  • 1/8-1/4 cup chicken broth
  • 3 large spoonfuls sour cream
  • 4 scallions, sliced
  • salt and pepper to taste

Method

  1. Wash potatoes and steam in a large pot. Do not peel or cut.
  2. Mash in mixer with whip attachment with butter and seasoning. Add broth once about half mashed.
  3. Once mashed (will be a little lumpy), add sour cream and most of scallions, reserving some for later. Adjust seasoning to taste.
  4. Put in serving bowl and sprinkle with reserved scallions.
